Paring Knives
What Kitchen Knives should every kitchen have?
I am in the process of gradually upgrading my existing kitchen knives one at a time and want to know what kitchen knives would be best to add to my collection. I have already have a quality 10" chef's knife, a 3" Paring Knife, a serrated Bread Knife and a 6" utility/Slicing Knife that I reach for all the time. Any others I should add? What about the Asian Santoku knives? Do I need one? I have a Sharpening Steel. I have about 3 more slots in my Knife Block. I'm not sure I'd use a Boning Knife much. I would like to know what other knives good cooks find useful.
I have a Global 10" chef's knife (G-16), their 3 or 4" paring knife (GS-38) and recently was given their 7" G-5 Vegetable Knife which is very similar in design to the Santoku knives by Global. The G-5 is the darned most useful knife I own. it works amazingly well for thinly slicing tomatoes or even cheese. I hardly ever use the paring knife and, of course, the chef's knife is a staple. Truth be told, I could get by with just the chef's knife but the Santoku form-factor just seems to work so well. I am now interested in a shorter broad Santoku-Style Knife such as the Global GL-G4.
Oh, and what krennao wrote: shears. They are truly indispensible. I once carved a small turkey with a pair and the results were great.
