Paring Knives
Just starting Culinary school and need knife recommendations?
Hello,
I am starting culinary school and have to purchase the following knives for class:
10 French Knife
3-4" Paring Knife
Vegetable Peeler
8" palette knife
14" meat slicer
Bread Knife
6" Boning Knife
10" semitar Butcher Knife
steel for sharpening
I would really appreciate some brand recommendations and also where to purchase those brands. I don't want to spend a ton of money, but if I need to, I will.

I am a former chef and recommend finding a good set at a good and reputable knife store, brands like Henekel, Wurstof, Victorinox, Gerber and Global are ones to look for.
The knive will come in a set, the simetar will be a separate purchase long with the vegetable peeler, get a few, they tend to go missing. The same with the paring knives, sets of 3 include a longer one and straight short one and beak shaped curved one, these are for paring veg, turning mushrooms and trimming small fruits.
As for where to buy, check out the Yellow Pages in town under Knife suppliers, some malls have stores, I am in Canada and I got to restaurant and hotel supply stores and kitchen ware places too.
